Title: Smoked Trout Stuffed Baked Potatoes

3/4lbHot smoked lake trout
6 Baking potatoes
1/2cHot milk
1/4tsFresh ground black pepper
1/4tsThyme
1 Egg; beaten
1/4cOnion; finely chopped
1/4cParsley; finely chopped
1/2cFine bread crumbs
1/4cButter; melted

Bake potatoes; cut in half length-wise while hot. Carefully scoop potato outof shells- keep shells intact for stuffing. Mash potato, add hot milk and beat until fluffy. Flake fish and add it, parsley, and onion to the mashed potatoes. Beat egg and seasonings together and combine with the potato mixture- fold all togather. heap mixture into the potato shells.
