Title: Smoked Trout Stuffed Baked Potatoes

3/4 | lb | Hot smoked lake trout |
6 | | Baking potatoes |
1/2 | c | Hot milk |
1/4 | ts | Fresh ground black pepper |
1/4 | ts | Thyme |
1 | | Egg; beaten |
1/4 | c | Onion; finely chopped |
1/4 | c | Parsley; finely chopped |
1/2 | c | Fine bread crumbs |
1/4 | c | Butter; melted |
Bake potatoes; cut in half length-wise while hot. Carefully scoop potato
outof shells- keep shells intact for stuffing. Mash potato, add hot milk
and beat until fluffy. Flake fish and add it, parsley, and onion to the
mashed potatoes. Beat egg and seasonings together and combine with the
potato mixture- fold all togather. heap mixture into the potato shells. Mix
bread crumbs with melted butter and sprinkle over potatoes. Bake 20 min at
