Title: Pepper Baked Lake Trout

1 1/2 | lb | Lake trout fillet |
4 | tb | Olive oil |
4 | tb | Finely chopped shallots |
Coarsely crushed black peppercorns | ||
Sea salt | ||
Fresh dill sprigs | ||
1 | Lemon, cut in half |
Rub trout fillet all over with olive oil and place in foil. Top with shallots and _generous_ amounts of coarsely crushed black peppercorns. Sprinkle with salt and garnish with dill. Squeeze lemon over all. Wrap the fish and place it on the grill and cook over low heat with cover down for about 20 minutes, or just until cooked all the way through.
