Title: Salt-Crusted Baked Trout

5 | lb | Kosher Salt |
4 | 8 oz whole trout, cleaned | |
With or without heads | ||
1/4 | c | Olive oil |
1 | Fresh lemon, cut into | |
Wedges | ||
Fresh whole herbs to your | ||

Freshly ground pepper |
Preheat oven to 500 degrees. Pour 2/3 of the slat into a large, shallow baking pan. Spread the salt faily evenly and place in the oven for 5 minutes.
Wipe the trout to remove excess moisture. Place herbs inside of the trout. Remobe the pan from the oven and arrange the trout on the salt so that they do not touch. Cover the fish with the remianing salt and bake for 15 minutes. Remove from oven.
Using a metal spatula, crack off the salt. Brush off all remaining salt and place on serving plate. Drizzle with olive oil. Serve immediately garnished with lemon wedge and pepper.
