Title: Grilled Trout - Sl 4/95

1/4 | c | Olive oil |
1/4 | c | Fresh tarragon |
1/4 | c | Lemon juice |
1/2 | ts | Salt |
2 | 2-pound dressed trout | |
4 | Sprigs fresh tarragon | |
1 | Lemon; sliced | |
Vegetable cooking spray |
: Combine olive oil and tarragon in a small saucepan. Cook over very low heat 20 minutes; pour mixture through a wire-mesh strainer; discard solids.
: Combine oil mixture, lemon juice, and salt; whisking to blend. Brush half of mixture inside each trout. Place 2 sprigs tarragon and 2 lemon slices inside each trout.
: Place trout n a large baking dish. Pour remaining oil mixture over trout. Cover and chill two hours.
: Place trout in a grill basket coated with cooking spray. Cook, covered with grill lid, over hot coals (400 F to 500 F degrees) 5 minutes on each side. Yield: 4 servings.
