Title: Rainbow Trout with Apple Cream Sauce

Yield: 2 Servings

1 1/2tbButter; divided
4 Rainbow trout fillets
1smApple; peeled & sliced
1tbShallots
1/3cHeavy cream
1/4cApple cider
1/4cDry white wine
1/8tsAllspice
  Salt
  Pepper

Fry trout in butter, skin side down, until golden brown, about 2 minutes. Turn gently; cook about 2 minutes more. Remove to plate; keep warm. Add apples to skillet with remaining butter; saute until tender, about 2 minutes. Remove from skillet and set aside. Add shallots to pan; fry until softened, about 1 minute. Stir in cream, cider, wine and appspice; simmer until thickened. Season; return apples to pan and heat through. Pour over trout and serve.
