Title: Marinated Celery Relish

Yield: 5 Cups
6 | lg | Ribs celery |
1 | c | Pimiento-stuffed olives |
1 | c | Packed parsley sprigs |
3 | Green onions; with tops, cut into 1-inch lengths | |
1/4 | c | Olive oil or vegetable oil |
1/4 | c | White wine vinegar |
2 | ts | Dried whole oregano |
1/2 | ts | Salt |
1/2 | ts | Freshly ground pepper |
Insert slicer disk in Hamilton Beach food processor; remove food discharge gate. Cut celery to fit food chute; process celery and olives continuously at high spped into a large glass bowl. Insert food discharge gate and steel chopping blade; add parsley and green onion to food processor bowl, and process until minced. Add to celery mixture. Stir in remaining ingredients. Cover with plastic wrap and refrigerate 12 hours, or overnight, stirring occasionally. Serve as an accompaniment to roasted meats or spooned over lettuce and served as a salad.
