12 | lb | Green tomatoes |
5 | Red peppers | |
6 | Green peppers | |
6 | Med onions | |
5 | c | White sugar |
1 1/2 | qt | Cider vinegar |
1 | ts | Cinnamon |
1 | ts | Turmeric |
1 | ts | Mustard, ground or whole |
2 | tb | Flour |
Chop vegetables using medium blade of food chopper. Sprinkle thoroughly with 1/2 cup plain salt (non-iodized). Let stand overnight, then drain thoroughly. Add sugar, vinegar and cinnamon.
Simmer slowly for 1 hour. Mix in rest of spices and cook 15 minutes longer. Pack into hot jars. Carefully wipe rims and seal with lids and bands. Mixture should be hot enough to seal without processing but you may process 30 minutes in hot water bath if desired. Makes about 6 pints.
Notes: This is like a sweet hamburger relish. Brown sugar gives it a richer flavor. I used to make this for my stepfather who was diabetic using Sugar Twin brand sugar replacement and he really enjoyed it.
