Title: Chopped Eggplant Relish

1mdEggplant
1smOnion, minced
1/2 Green pepper, minced
1smTomato, peeled, chopped
1tbOil
1tbVinegar or lemon juice
1 1/2tsSalt
1/4tsPepper

Place whole eggplant in baking pan in 350 degrees oven. Bake until skin is wrinkled and soft Remove from oven, peel off skin Add onion, green peper, and tomatoes, chopping until well blended Beat in oil, vinegar, salt and pepper. Chill.
