Title: Cucumber, Tomato, Scallion, & Yogurt Relish

1 | md | Cucumber |
1 | c | Yogurt |
1 | ts | Sugar |
1/4 | c | Chopped scallions |
1/4 | ts | Cumin |
1/2 | c | Peeled, seeded, cubed tomato |
1. Peel cucumber. Cut lengthwise in half and scrape out center seeds 2. Cut
cucumber into 1 1/2 inch lengths. Cut into coarse shreds with a hand grater
or food processor. There should be about 1 1/2 cups. 3. Combine yogurt,
cucumber and remaining ingredients. Refrigerate and allow flavors to blend
