Title: Bush Tomato Relish

Yield: 1 Servings
1 1/2 | kg | Tomatoes, Roma, peeled. |
500 | g | Onions, peeled and sliced. |
1/4 | c | Salt |
1 1/2 | c | Vinegar, brown |
2 | c | Sugar, brown |
2 | ts | Mustard |
3/4 | c | Cornflour |
3/4 | c | Vinegar, brown, extra. |
1/2 | ts | Ginger, ground |
1/2 | ts | Cinnamon |
1 | tb | Mint, native |
1/2 | tb | Bush tomatoes, dried, ground. |
Cover the tomatoes, onions and salt with water and stand overnight. Drain.
Combine with the vinegar and brown sugar in a heavy saucepan, bring to the boil, then reduce the heat and simmer for 10 minutes.
Make a smooth paste with the curry powder, mustard, cornflour and extra vinegar. Gradually stir this mixture into the saucepan and simmer for a further 40-45 minutes.
Add the ginger, cinnamon, mint and bush tomatoes. Remove from the heat immediately, otherwise the relish will turn bitter. Pack into clean, sterilised jars. Makes 6 cups
