Title: Rougail De Mangues Vertes (Green Mango Relish)

2 | lg | Green Mangoes; * |
2 | ts | Grated onion |
1/2 | ts | Fresh red chilli; ** |
1 | tb | Peanut oil |
Salt & Pepper | ||
Parsley; chopped |
NB * Mangoes should be hard and unripe. weighing about 500g each. ** Ideally a Scotch bonnet (extremely hot pepper) would be used, but cayenne can be substituted.
Peel the mangoes, chop flesh coarsely and put through a sieve. Add the grated onion, hot pepper, salt & pepper to taste and the oil. Garnish with parsley.
In the past, this fresh chutney from the French Islands (Martinique & Gudeloupe) was used as an Hors d'Oeuvre. It is also good with curry, or fish, or meat - especially cold meat.
