Title: Blinis (Dec.1996)

Yield: 6 Servings
1 | ts | Yeast or 1 cake yeast |
2 | c | Milk |
1 1/2 | c | Or 350 g flour |
3 | tb | Whole wheat flour |
3 | Eggs | |
1 | ts | Salt |
2 | tb | Sugar |
2 | tb | Butter |
Dissolve yeast in 1/2 cup milk. Stir in sugar , 1/2 cup flour and the whole wheat flour. Cover with plastic and let stand 2 hours until it foams. Add rest of flour alternating with the milk and salt. Stir in egg yolks with a whip to prevent lumps. Whip well. It should look like a thick pancake batter. Let stand 1 hour. Whip the egg whites and slowly fold them into batter. Heat a frying pan or griddle melt a little butter in it. Add a large spoonful of batter and form rounds. Cook on one side until bubbles form and blini is almost dry. Flip over and cook on the other side.
Serve warm with butter and salmon or fish roes , sour cream and chives
