4	tb	Olive oil
2	ts	Ground ginger
2	ts	Dry mustard
4	ts	Ground turmeric
1	ts	Ground cardamom
1	ts	Cayenne pepper
1/2	ts	Ground cinnamon
1/2	ts	Fennel seeds
1	ts	Salt
2	lb	Raw cashews

Preheat the oven to 350 In a saute pan over medium heat, heat the oil. Add the spices and stir for 2 minutes to toast. Remove from heat, add the cashews, and toss until the nuts are coated thoroughly. Arrange the cashews in a single layer on a baking sheet and bake for about 15 to 20 minutes, or until the nuts are browned, turning once.
