Made most of summer, but traditionally frm St Georges' Day, 23 April Dandelion wine or tea has long been used as a diuretic (and now we're talking medicinal effects of herbs which is TWO off topics in ONE post). The yellow blossons make a fine strong wine and if a few green calices are left in and the wine is kept for a few years, a remarkable whisky flavour emerges. Two quarts are needed. Use base (A).

Base (A) All grape concentrate a white one with as little character as possible, and certainly not one that has been flavoured or compounded in any way. Make it up as instructed on the sachet or can for a sweet or medium sweet wine. This usually means adding 12-20oz sugar to the gallon. From: Ian Hoare Date: 21 May 98
