Title: Joel Ehrlich's Peach Conserve

Yield: 4 Cups
7 | lg | Ripe Peaches, Any Kind |
1 | lg | Valencia Orange |
4 | c | Sugar |
1 | pn | Salt |
Skin the peaches. Remove the pits. Chop. Halve the orange. Remove the seeds. Chop (including the rind). Place the chopped peaches and orange in a measuring cup (should equal roughly the same amount as the final amount of conserve you are making). Add an equal amount of sugar. Place the fruit in a large saucepan. Cover with the sugar. Let stand for 30 minutes. Slowly bring the mixture to a boil. Add the salt. Reduce heat to very low. Simmer for 30 minutes, stirring occasionally to prevent sticking and burning. Prepare the canning jars or jelly glasses. Pour the cooked conserve into the sterilized jars. Cover and seal.
