2 | lb | Sugar with added pectin |
Zest of quarter of a lemon | ||
9 | Cloves | |
2 | Heaped tsps fresh ginger, | |
Chopped fine | ||
1 | ts | Allspice, level |
1 | ts | Cinnamon, heaping |
Made a batch of Spiced Pear Jam this weekend - just improvised the recipe
but it came out really nice (a bit soft-set though.. would've liked it
firmer but hey, you can't win 'em all, esp. not on guesswork * (came to about 8 cups or so?) (was nearly 2 pints of puree when poached
down)
Basically poached the pears in just a tablespoon or so of water, with the
zest (shredded fine) and cloves until they went soft and mushy. Mashed 'em
lightly with a potato masher and measured the puree - about 2 pints. Added
the spices and stirred them in well. Used a pound of sugar per pint of
puree (approx). Boiled until setting point (or so I thought
:) ), decanted into warm clean jars, voila.
I suspect this would benefit from a dash of something alcoholic :) Brandy
