  Sectioned)

6tbLemon juice

Figs for jam may be cut into small pieces or mashed. They may be peeled or unpeeled. If unpeeled, the pieces should be rather finely cut in order that a tender jam may result.

Combine the sugar and the fruit. Add lemon juice, Place over a slow fire. When the mixutre comes to a full boil, cook for 20 minutes. Remove from the stove and let set overnight in the pan in which it was cooked. The next morning, fill hot glasses with the cold jam.

(It is recommended that in all cases where cold mixtures are put into jars or glasses, paraffin should be poured on immediately, since the heat of the fat prevents molds and fermentation.
