12 | c | Pumkin,peeled, cubed |
2 | qt | Apple Cider |
2 | c | Honey |
1/2 | c | Frozen Orange Juice |
| | Concentrated |
4 | ts | Cinnamon |
1 | ts | Cloves, ground |
1/2 | ts | Nutmeg |
1. Cook pumkin in cider until tender, about 15 to 20 minutes. 2. Mash
pumpkin or blend in blender with some of the cooking
liquid. 3. Return pumpkin, the cider in which it was cooked, and the
honey and orange juice concentrate to an open kettle. Simmer
this mixture until it forms a mound when dropped from a spoon
on a cool saucer. 4. Add spices. Pour into clean jars and label. Keep
cool and
use within four weeks.
