Title: Green Tomato Pickle

4 | qt | Sliced green tomatoes |
6 | x | Large onions, sliced |
6 | c | Vinegar |
6 | x | Green peppers, sliced |
3 | x | Sweet red peppers, diced |
6 | x | Garlic cloves, minced |
1 | tb | Dry mustard |
1 | tb | Whole cloves |
| | Stick cinnamon |
1 | tb | Dried ginger |
1/2 | tb | Celery seed |
2 1/4 | c | Honey |
Combine sliced green tomatoes and onions. Sprinkle with salt and let
mixture stand for 12 hours. Wash in clear water and drain. Heat vinegar to
the boiling point, add the peppers and the garlic. Then add the
tomato-onion mixture. Tie spices in a square of cheesecloth and drop into
mixture. Simmer about one hour, or until tomatoes are transparent, stirring
frequently. Then add honey.
Pour into hot jars, leaving 1/4 inch headspace, and process 15 minutes in
