Title: Freezer Cucumber Pickles-Anita A. Suggs

Yield: 10 Servings
4 | lb | Pickling cucumbers, sliced |
8 | c | Onions, thinly sliced |
1/4 | c | Salt |
3/4 | c | Cold water |
4 | c | Sugar |
2 | c | Cider vinegar |
Combine Cucumbers, onion, salt, and water in two large plastic or glass bowls (no metal!).Let stand at room temperature for 2 hours, then add sugar and vinegar and stir until resolved. Pack in 1 pint freezer containers, leaving 1 inch headspace. Cover and freeze for up to 6 weeks. Thaw at room temerature for 4 hours before serving.
When I was first given this recipe, I couldn't imagine that freezing cucumbers would work! but I was surprised, they came out perfect! Great for last minute office potlucks or to give as gifts to friends and neighbors.
