1	lb	Hot peppers
1	qt	Vinegar
		Non-iodized salt to taste,
		Optional

Combine chiles and vinegar in a saucepan. Bring to the boil, reduce heat to medium low, and simmer 5 min. Add salt to taste. Pack in 2 sterilized pint jars. Let stand at least a week before using.
