Title: Pickled Green Peppers

3 | lb | Green peppers; 7-9 large |
Boiling water | ||
2 1/2 | c | Vinegar |
2 1/2 | c | Water |
1 1/4 | c | Sugar |
8 | cl | Garlic |
4 | ts | Salad oil |
2 | ts | Salt |
Remove seed pods and white seams. Cut lengthwise into 3/4-inch strips. Place strips in bowl, cover with boiling water. Let stand 5 minutes, then drain.
Combine vinegar, water, and sugar in a saucepan. Simmer for 5 minutes. Pack peppers in clean hot jars. To each jar, add 2 cloves of garlic, a teaspoon of oil, and 1/2 teaspoon of salt. Pour hot liquid over peppers to within 1/2-inch of top, making sure the vinegar solution covers the peppers. Cap at once. Process 5 minutes in boiling water bath.
