1. Boil figs, sugar, lemon juice and water rapidly until clear. If syrup becomes too thick before the figs are clear, add boiling water, 110 ml at a time.

2. Let figs stand in syrup overnight. If syrup is too thin, drain it off and boil until thick as honey.

3. Pack figs into hot jars. Process 15 min. at simmering.

Difficulty : easy. Precision : measure ingredients.
