Pickles are made of vegetables, or of fruits. The vegetables or fruits may
or may not be pared
They may be left whole, -
sliced, or chopped, according to the
type of pickle desired. Vegetables bay be pickled by the use of salt or of
vinegar, or by vinegar and salt in combination. Fruits are pickled by the
use of vinegar, sugar, and spices. Whole spices should be tied in a thin
cloth bag. Pickles should be packed at once in freshly sterilized jars,
and sealed
