Title: Pickled Aubergines / Eggfruit

Yield: 1 Servings

3 Aubergines
  Spiced vinegar

Cut the aubergines in half lengthways. Boil them in salted water for 2 minutes.

Drain the aubergines. Place in sterilised jars and cover with cold spiced vinegar. Seal and store for 2 weeks before using.

Yield depends on the weight of vegetables.

*March 12, 1995-\made April 1995- served with cheese on bread. Magnificent 9/10 ??? -gone sour.
