Title: Pickled Watermelon Rinds

1 3/4 | kg | Peeled and sliced watermelon |
Rind | ||
1 1/2 | Litres water | |
3 | tb | Salt |
6 | c | Sugar |
3 | c | Water |
3 | Lemons, sliced very thinly | |
3 | c | Vinegar |
1 | tb | Coarsely grated ginger |
2 | Cinnamon sticks | |
2 | ts | Whole cloves |
2 | ts | Whole allspice |
Place the watermelon rind in a large, non-corrodible bowl, add the water and salt, and leave to soak for 12 hours. Drain the rind, wash it under cold running water, drain well again and set aside.
Place the remaining ingredients in a large saucepan and bring slowly to the boil, stirring until the sugar dissolves. Boil the mixture for 10 minutes, then add the watermelon rind. Return the mixture to the boil and cook until the rind becomes cleat Pour the mixture into warm, sterilised jars and seal at once. From: Sherree Johansson Date: 03-04-96
