Title: Vaguely Aloo Gobi with Canadian Spices

Yield: 4 Servings
3 | tb | Veg oil |
2 | md | Potatoes; cut into bite sized pieces |
1/2 | Cauliflower; cut into florets & stalk chopped in 1/4" dice t | |
1/2 | ts | Garlic; minced |
1/4 | ts | Powdered ginger |
1 | Pickled red chile pepper; chopped [or more] | |
1 | ts | Garum Masala |
2 | ts | Prepared French's mustard |
In a medium saucepan, heat oil until it is hot and drop in prepared potato and cauliflower pieces. Stir until all the pieces are basted in hot oil. Reduce heat, cover and "sweat" the veggies for five minutes. Add garlic, ginger, chopped chile pepper[s], mustard and cauliflower leaves. Add a 1/4 cup of water and stir. Cover, raise heat until water boils, stir, recover and then reduce heat. Simmer 5 min. and serve.
This is a quick and easy recipe that is different from but inspired by authentic Aloo Gobi recipes and contains ingredients that are easily obtained anywhere.
