Title: Cajun Sweet Potato Pie

1 1/2 | c | Cooked, mashed, sweet |
Potato | ||
1/2 | c | Honey |
1/2 | c | Sugar |
1/2 | ts | Salt |
2 | Eggs, whipped by hand for 1 | |
Minute | ||
1 | c | Pecan halves |
1 | ts | Cinnamon |
1 | ts | Vanilla |
1 | Unbaked pie shell |
Preheat oven to 350ø.
In your mixer, on medium speed, add potato, honey, cinnamon and salt. Mix well. Add the whipped eggs, sugar and vanilla. Mix well. On low speed stir in the pecans. This is not a stiff batter.
Pour mixture into unbaked pie shell and bake for 1 hour. Cool before serving.
Serves 8.
