Title: Lighter Bake Oatmeal Raisin Cookies

1/2 | c | Brown sugar, packed |
1/4 | c | Sugar |
1/3 | c | Lighter Bake or Prune Puree |
1 | lg | Egg |
1 | ts | Vanilla |
3/4 | c | All Purpose Flour |
1/2 | ts | Baking Soda |
1/2 | ts | Cinnamon |
1/4 | ts | Baking Powder |
1/4 | ts | Salt |
1 1/2 | c | Quick Cooking Oats |
3/4 | c | Raisins |
PRUNE PUREE |
6 | oz | Prunes, pitted (one cup) |
6 | tb | Hot water... |
Preheat oven to 375 degrees F. Coat baking sheets with non-stick spray;
set aside. In mixing bowl, beat together sugars, Lighter Bake or prune
puree, egg and vanilla. In another bowl, combine, flour, baking soda,
cinnamon, baking powder and salt; stir into first mixture.
Stir in oats and raisins. Drop by rounded spoonfuls onto prepared cookie
sheets. Bake 8 to 9 minutes or until edges begin to brown. Cool on racks
Directions for Prune Puree. In a food processor, combine 6 ounces (one
cup), of pitted prunes with 6 tablespoons of HOT water; process until
smooth. Makes one cup.
Substitute for butter in cookies or cake.. use 1/2 cup of prune puree to
replace 1 cup of butter..
