Title: Enola's Fried Corn with Sour Cream Sauce

Yield: 2 Servings
1 1/3 | tb | Butter |
1/8 | c | Bell pepper; chopped |
1/3 | tb | Onions, chopped |
1 | c | Corn |
1 1/3 | tb | Flour |
1/3 | c | Sour cream |
Saute bell pepper, onion, and corn in butter until tender. Add flour and mix well. Add sour cream and stir until thickened. Season with salt/pepper.
Sylvia's comments: With onion, corn, butter, and sour cream, how could this miss? However, I have NO idea what the "frying" in butter is supposed to do for the corn. It was rich and satisfying, but would have been just as good if just the onion & bell pepper had been sauteed and the corn dumped in.
