Title: Lbj's Bbq Sauce

1/2 | c | Catsup |
1 | c | White vinegar |
1 | c | ;water |
4 | oz | Butter (1 stick) |
1/4 | c | Sugar |
1 | Onion; grated | |
1 | tb | Dry mustard |
2 | tb | Worcestershire sauce |
1 | Clove garlic; minced | |
2 | Bay leaf; whole | |
1 | tb | Chili powder |
1/4 | ts | Cayenne |
1/4 | ts | Cumin * |
1 | ts | Black pepper; freshly ground |
1 | ts | Paprika |
Juice of 1 lemon | ||
1 | tb | Unflavored meat tenderizer * |
Mix ingredients in a sauce pan. Heat until butter is melted. Simmer 15 minutes.
Cook the roast on a "pan" made of foil. Baste frequently. Remove "pan" for the last 30 minutes. Don't use a "pan" on ribs or brisket. They should be dry rubbed with a spice mixture similar to the sauce and double wrapped in heavy duty foil through most of the cooking. Unwrap the last couple of hours of cooking and baste with sauce.
