Title: Crusty Horseradish Chicken

Yield: 4 Servings
1 | lb | Boned and skinned chicken breast halves |
3/4 | c | Breadcrumbs, wholewheat |
1/4 | ts | Salt |
1/4 | ts | Freshly ground pepper |
2 | tb | Prepared horseradish |
1 | tb | Dijon mustard |
1/4 | c | White wine |
Preheat oven to 350 degrees. Cut meat into 4 portions. On a plate mix together the bread crumbx, salt and pepper. In a bowl stir together the horseradish, mustard and wine. Dip chicken in the horseradish mixture until well coated. You can marinade for up to 1 hour for a stronger flavor. Roll the chicken in the breadcrumbs to coat evenly. Place pieces in a casserole (not glass). Don't let the pieces touch. Bake uncovered for 25-30 mins. until firm to the touch. Posted to MC-Recipe Digest V1 #
