Title: Rice Casserole or Tortilla Stuffing

4 | c | Cooked rice |
1 | qt | Tomatoes, spicy salsa, or |
Spaghetti sauce | ||
1 | lg | Onion, chopped |
4 | Stalks celery, chopped | |
1 | pt | Okra |
3 | c | Mushrooms, chopped |
3 | Carrots, grated | |
Taco seasoning | ||
Pepper | ||
Garlic |
Saute the onions, celery and grated carrot until tender. Place in large bowl. Saute the mushrooms until browned. Add to bowl. Add cooked, cooled rice to bowl. In same pan, heat up the sauce, add the seasonings and okra and bring to a boil. Pour over the mixture in the bowl and stir to thoroughly mix.
This mixture can then be used as a casserole or a tortilla stuffing. If using it for a casserole, spray the dish, spoon in rice mixture and top with a bit of grated cheddar. If using as a tortilla stuffing, just heat tortilla's, fill and roll. Serve with salsa and sour cream on side.
