Title: Western Carolina Style Barbecue Sauce

Yield: 3 Half-cups
BARBECUED RIBS, SMOKED BUTTS | ||
1 | c | Catsup |
1 | c | Sugar, brown; firmly packed |
1/2 | c | Juice, lemon |
3 | tb | Butter |
1/4 | c | Onions, chopped; finely |
1 | ts | Hot pepper sauce |
1 | ts | Worcestershire sauce |
Place all ingredients in saucepan. Bring to a boil and simmer 30 minutes, or until slightly thickened. Makes 1-1/2 cups.
Sylvia's comments: I didn't realize I didn't have lemon juice until almost done, so I subbed cider vinegar. I sauteed the onions in the butter before adding the other ingredients, since I don't like raw onions in sauces. This was actually too sweet even for me! I might make it again, but halve the brown sugar.
