Title: Croatian Goulash/spatzles

lb | Beef cubes | |
1 | ts | Paprika |
2 | tb | Hot butter |
1 | Garlic clove (minced fine) | |
Flour for dredging | ||
3 | Green bell peppers, sliced | |
1 | lg | Onion, sliced |
16 | oz | Can tomatoes |
1/2 | ts | Pepper |
1/2 | c | Water - or more if necessary |
1 | ts | Salt |
SPATZLES | ||
2 | lg | Eggs, well beaten |
1 | tb | Melted butter |
Flour enough to make a | ||
Thick paste |
Roll beef in flour to which paprika has been added. Brown meat in two tablespoons of butter, then add garlic, green peppers and onions. Saute about five minutes. Add canned tomatoes, pepper, salt and a little water.
Simmer slowly until beef is tender. Check to make sure it does not cook dry, add water if necessary.
Serve over noodles or spatzles.
Spatzles: Combine well beaten eggs and butter. Add enough flour to make a thick paste.
Using a large spoon, rub this mixture through a colander into a pot of boiling water.
Stir lightly and boil eleven minutes. Drain.
Let cold water run through the spatzles.
Saute in butter and serve over goulash
