Title: Zagoria Cheese Puff Appetizer

3 | c | Water |
Salt and pepper to taste | ||
1/4 | kg | Fetta Cheese (Nice damp |
Stuff not hardened old | ||
Stuff) | ||
2 | oz | Olive Oil (The good stuff |
Green extra Virgin if | ||

Mix all the items together except the Fetta until it is a thick liquid and then pour into a greased baking pan (about 0.5 in depth of liquid) Sprinkle the Fetta on top, cook at 500deg until crispy. Cut and serve.
I picked this up a month ago in Greece. It is specific to the region known as Zagoria up between the Pindos Mountains and Albania and is from the Hotel Elati in that area.
