Title: Bulgarian Shredded Noodles (Trahana)

1/2 | ts | Salt |
1 3/4 | c | Flour |
1 | c | Water |
1 | c | Milk |
1 | tb | Butter |
1/2 | ts | Salt |

Grated cheese |
Beat 2 eggs and 1/2 teas of salt. Add 1 3/4 c flour and mix well. Knead on a flat surface for about 4 minutes. Dough should be stiff and smooth. Form into a ball, wrap in plastic and freeze. Shread through coarse grater over sheets of wax paper, separating the peices. Let them dry thoroughly and store as for any other pasta.
Cook it in 1 c water, 1 c milk, 1 T butter, 1/2 teas salt (simmer), add
that pasta, and simmer for a few minutes until the pasta is firmly cooked
and all the liquid absorbed. Turn into a baking dish, dot with 1 tablesp.
of butter and bake at 225F for 10-15 minutes. Toss with lots of grated
