Into mixing bowl or electric mixer bowl, sift flour, baking powder, & salt. Make a well in center & add eggs, 1 tb oil, & 1 tb water. Using hands or dough hook of an electric, mixer blend ingreds together. Knead for 2-3 mins, adding more oil & water (1 tb at a time) to make smooth dough. Continue kneading w/electric mixer, or remove to lightly floured surface & knead 5 to 6 mins by hand until dough becomes very smooth & elastic. Roll dough into ball & place it in oiled bowl, cover, & let rest for 1 hr. Preheat oven to 350F. Lightly grease baking sheet w/ vegetable oil. On lightly oiled board, roll out dough until very thin, abt 1/8-" thick. To get dough as thin as possible, you will need to pull & stretch it as you roll it out, being careful not to not to tear it. You should end up w/rectangle of rolled-out dough abt 12-" long & 6 to 8-" wide.
Spread either of fillings evenly over entire surface of dough, leaving a 1-inch margin around edges. Gather up dough at the bottom of one of 12-inch sides & roll up dough like a jelly roll. Place roll fold-side down. Cut roll into 3 to 4-inch sections, pinch dough on each open end to close. Place on the lightly greased baking sheet. Brush tops of knishes w/ oil. Bake in preheated over for abt 45 mins, until knishes are golden brown.
ADVICE FROM MAMA: Another way to make knishes is to roll out dough as thin as possible, cut it into 3-inch circles or squares. Place a tablespoon of filling on each of circles or squares & fold to make a half-moon or triangle. Pinch edges together & bake as above.
