Title: Cool, Creamy Black Bean Soup

Yield: 4 Servings

4cBlack beans (3 15-oz cans,
  Drained and rinsed)
1 1/2cPlain non-fat yogurt
4 1/2ozMild peeled green chilies
2tsCumin
1/2tsBalsamic vinegar or lemon
  Lemon
  Salt and pepper to taste
1tbSnipped chives or sliced
  Green onions

Puree all ingredients but chives or onions in blender or food processor. Serve cold, topped with a dollop of yogurt and sprinkled with chives or onions. Serves 4. Per serving: 292 calories, 21g protein, 51g carbohydrates, 16g fiber, 1g fat, 337mg sodium.
