Title: Stop & Go Salad

3 | oz | Pkg orange gelatin |
6 | oz | Pkg green gelatin |
6 | oz | Pkg red gelatin |
8 | oz | Pkg cream cheese |
1 | c | Mini marshmallows OR marshmallow cream |
1 | c | Whipping cream |
1/2 | c | Mayonnaise |
6 | oz | Can crushed pineapple &juice |
To keep in line with the "stoplight" theme, make sure you layer the colors of gelatin in the same order as the stoplight (that is red on top, orange in middle, green on bottom). You can use any flavor you wish for the red colored gelatin. I often make this in either a clear bowl, or a mold for variation (although you have to remember to adjust the green and red layers according to which one will end up on top when it is served). Also the thicker the layer of gelatin is, the longer it will take to set properly so it won't "bleed" into the one poured over it. Just make sure the second and third layers ingredients are COOL before trying to pour them over the previous layer, otherwise they will melt together and ruin the effect.
DIRECTIONS: Dissolve lime jello in 2 cups boiling water, pour into 2x9x14 pan. Chill until set.
Dissolve orange jello in 1 cup boiling water, place in top of double boiler. Add cream cheese and marshmallows. Heat and stir until smooth. Add unwhipped cream, mayonnaise and pineapple with juice. Heat and stir until smooth. Cool until barely warm but not set. Spread over lime jello. Chill until set.
Dissolve red jello in 2 cups boiling water. Cool until barely warm but not set, pour over top of other jello mixtures. Chill until set.
