Title: Turkey Meat Loaf

Yield: 2 Servings
2 | lb | Turkey breast, ground |
1 | c | Oats, quick-cooking |
1 | md | Onion; chopped |
1/2 | c | Carrot; shredded |
1/2 | c | Milk, skim |
Egg substitute; to equal 1 egg | ||
2 | tb | Ketchup |
1 | ts | Garlic powder |
1/4 | ts | ;pepper |
TOPPING | ||
1/4 | c | Ketchup |
1/4 | c | Oats, quick-cooking |
In a large bowl, combine the first nine ingredients; mix well. Press into a 9x5x3" loaf pan that has been coated with nonstick cooking spray. Combine topping ingredients; spread over loaf. Bake, uncovered, at 350 degrees for 65 minutes or until juices run clear.
Diabetic Exchanges: One serving equal 3 very lean meat, 1 starch; also, 154 calories, 186 mg sodium, 27 mg cholesterol, 11 gm carbohydrate, 23 gm protein, 2 gm fat.
