Title: Pan-Barbecued Deer Ribs

1 | tb | Dijon-style mustard |
1 | tb | Tomato paste |
1/2 | c | Soy sauce |
Juice of 1/2 lime | ||
1 | ts | Jalapeno or tabasco sauce |
Recipe by: Outdoor Life Feb/96 Whisk all ingredients together until thoroughly blended.
Depending on the size of the deer, cut ribs into single- or two-rib portions and roll them in the mixture.
Preheat oven to 400~. Lay ribs in a large open (greased) roasting pan, pour 1 cup of hot water around, not over, ribs and roast in the middle of the oven about 20 minutes, until brown and crispy on the outside and a little rare near the bone.
Serving suggestion: As appetizers accompanied by Bourbon or beer.
