1tbSummer savory
1tbAllspice
4tbSugar
1tbCoriander
2tbWhole mustard seed
10clGarlic; crushed
4tbCracked black pepper
1tsSaltpeter
2cHard cider

Run the venison, bacon, and salt pork through a fine grind. Add seasonings and combine well. Pack into a tub or covered bowl and allow seasonings to combine for a day or two in the refrigerator.

Stuff into hog casings, and hang to dry for a day or so before using.
