BTW, the best part of a squirrel IMO is the brain. Taste sorta like a chicken liver and is very tender. You just fry the entire head like the rest of the squirrel and then crack open the skull for the dessert inside.

He's not kidding!! Here in Missouri, I know of lot's of people who hunt squirrels with shotguns so they will not shoot the heads up to badly. I cannot bring myself to try the brains, but I've watched as folks gobbled 'em up.
