Title: Sparerib Crown Roast Kala Emi-Hawaii

3 | lb | Spareribs |
2 | tb | Soy sauce |
1 1/2 | ts | Salt |
3 | c | Cubed bread |
1/4 | c | Melted butter |
10 | Water chestnuts, chopped | |
1 | cn | (9 oz) pineapple tidbits or |
Fresh | ||
1/4 | c | Pineapple syrup (or juice) |
1/2 | ts | Ground ginger or |
1 | tb | Fresh ginger minced |
1/4 | ts | Paprika |
3/4 | c | Chopped prunes |
Have spareribs cut in half length wise. Rub with 1 tablespoons of the soy sauce, sprinkle with 1 tespoon salt and 1/2 teaspoon pepper. Skewer ends together to form crown. cut a circle of heavy duty aluminum foil. large enough to extend 2 inches on all sides of the roast. Place roast on foil in shallow baking pan. Combine remaining ingredients and remaining 1 tablespoon soy sauce, 1/2 teaspoon salt. Turn stuffing into center of crown. Bake at 350 deg F. for 1 1/2 hrs or until done. serves 3-4
