Title: Huli-Huli Chicken Marinade (Lparis)

1/4 | c | Pineapple juice |
3/4 | c | Soy sauce |
1 | To 1 1/2 tsp ginger, finely | |
Grated | ||
1 | Clove crushed garlic | |
2 | tb | Brown sugar |
2 | tb | Apricot preserves |
Mix ingredients together. For BBQ, Marinate 2 hours or overnight. For up to 3 lbs of chicken pieces. Or, if you cook the chicken in a rotisserie, marinate the bird in a plastic bag in the refrigerator for at least two hours and then roast slowly in the rotisserie, at 325 degrees, basting with the marinade every 15-minutes. It'll be done when the chicken almost falls off the bones. Be sure to catch the drippings, they make a wonderful sauce to pour over rice to eat with the chicken.
