Title: Coconut Chicken with Fresh Fruit

2tbButter
8 Skinned and boned chicken
  Breast halves
1tbFinely chopped fresh ginger
  Root
1/2tsSalt
1/3cFlaked coconut, toasted and
  Divided
1cWhipping cream
3 Bananas, quartered
1 Larg papaya, peeled , seeded
  & sliced
  Garnishs
  Lime wedges, Italian
  Parsley

melt butter in lrge skillet over med high heat; add chicken and cook 4 min on each side or until lightly gborwned. SPrinkle with ginger root, salt & 3 tbsp coconut; andd whipping cream. cover and cook over low heat 10 mins. a rrange chicken, babnana, and papaya on a lrge serving platter. pour warm sauce over chicken,banana, papaya and sprinkle with remaining coconut. garnish if desired.
