Title: Chicken Livers Aloha

1/4cButter or margarine
1cChopped celery
1/2cChopped onion
1mdGreen pepper, sliced
1 1/2lbChicken livers
15ozCan pineapple chunks,
  Drained
2tbBrown sugar
1tbCornstarch
1 3/4tsSalt
1pnGround pepper (optional)
3/4cWater
2tbCider vinegar
3cHot cooked rice

In 12 inch skillet over medium high heat, in hot butter, cook celery, onion and green pepper until tender-crisp, about 5 minutes. Add livers, cook 10 minutes, stirring , add pineapple. In small bowl, mix sugar, cornstarch , pepper and salt. Stir in water and vinegar until smooth. Stir into chicken livers, cook, stirring, until thickened. Serve with rice.
