1 | md | Onion; chopped |
2 | c | Water; divided |
2 | tb | Achiote seeds |
2 | c | Rice; uncooked |
1 | ts | Salt |
1/2 | c | Peas; frozen |
This is a Guam national dish that is rather mild.
Saute bacon and onion about 5 minutes, drain off fat and set aside. Add 1/2 cup water to achiote seeds to color the water, about 10 to 15 minutes. Strain the seeds from the water and pour the red water into a saucepan; discard the seeds. Add remaining water, rice, salt, bacon and onion. Bring to a boil, cover and turn heat down to a simmer; cook 20 to 25 minutes. When rice is almost cooked, stir in frozen peas. Serve warm.
