1 | cn | (12 oz.) Spam luncheon meat |
Cut in strips | ||
2 | Whole pineapples | |
3 | cn | (14 1/2 oz.each) chicken |
Broth | ||
1 | c | Wild rice |
1/2 | c | Pineapple tidbits |
1 | c | Dried apricots -- coarsely |
Chopped | ||
1/2 | c | Cashews |
1/3 | c | Onions -- chopped |
1/2 | c | Parsely -- chopped |
1/2 | c | Craisins |
4 | ts | Dijon mustard |
1/2 | ts | Cinnamon -- ground |
1/4 | ts | Cloves -- ground |
1 | Clove garlic -- minced | |
3/4 | c | Olive oil |
6 | tb | Tarragon vinegar |
Dressing----- |
In skillet, over medium heat, saute Spam until lightly browned. Cool. cut pineapples in half, lengthwise, leaving shells intact. cut pineapple into tidbits. Reserve, pineapple tidbits and shells. Bring broth to a boil. Add wild rice, reduce to simmer. cook over medium low heat for 50 minutes, or until rice is tender. drain rice well. Cool. Transfer Spam and wild rice to large mixing bowl. Add pineapple tidbits (can use more than 1/2 cup) to rice mixture. Add apricots, cashews, onions, parsely and craisins . Toss mixture with dressing. Spoon into pineapple halves before serving.
Note: The rest of the pineapple ttidbits can be used for something else.
Dressing:
In small bowl, whisk tarragon vinegar , mustard, cinnamon, cloves, and garlic. add olive oil. Whisk again.
